I am Married to a 'Fabulous' Man, Paul.. I had 2 Incredible Children, Emma and Sam... and now there is an additional Child - an Incredible Son in Law Chris.. Yay!!!

At the moment I am creating an Amazing Cafe in Northbridge with the Family (you can 'like' us on Facebook)...It's Lots of Hard Work but I am Living in a Dream I have had for many many many years :} 

I am involved with helping Students at Risk and also creating Community Initiatives to help People... I am an Administrator by trade and have done alot of Organisational and People Management over the last 20 years..

I am on a journey to becoming health.i.er... I have been overweight my whole life and am right now working on healing my digestive system... My Body & Mind Luv Living Foods so this is where i Labour... and hopefully on the way, I am able to share it with others...

Elements.Cream Cheese.. with Spring Onion

Servings:  makes approx 1 kilo

 

Ingredients: 

2 cup sunflower seeds, washed and soaked
1 cup pine nuts
2 lemons, juiced 

1/3 cup raw olive oil

1 bunch of spring onion
½ tablespoon raw salt

Preparation: 

Prep: Wash/rinse the Sunflower Seeds very well and then soak in good water for at least 4 hours, 6 is better. Rinse and shake dry in your strianer or allow to air dry for a while.

  1. In your food processor process the dry ingredients (sunflower seeds, salt and pine nuts) until a fine meal.
  2. Add the lemon juice and olive oil. Process again until smooth, Scrape off sides as needed. Get it so it is rolling as it moves around your processor.
  3. Process until smooth yet very thick. Dont be scared to let it go for ages, the longer it goes the creamier it is. Then at the end add the Spring Onions and process slightly to break them into the cheese.
  4. Allow to stand for 30 mintues. If you taste it while it is being made or right after, expect the lemon to stand out. It dies down after it has sat for a while.

You can shape into cubes or balls and dehydrate for a while to get a firmer cheese for cheese salad, feta etc
